AIRFRYER: MIXED BERRIES MUFFINS

I have two bags of frozen berries which were given to me by my sister during the start of MCO. They have been sitting in the freezer for more than four months now. Today, I decided to bake some muffins with them.

MIXED BERRIES MUFFINS
(12 muffins)

Ingredients:
1  cup of frozen/ fresh berries

Wet Ingredients:
1 eggs
1 cup yoghurt (plain)
1/3 cup vegetable oil
1 teaspoon vanilla essence

Dry Ingredients:
2 cups self-rising flour
1/3 cup sugar
1/4 teaspoon Salt

Method:
  • Mix the berries gently with the dry ingredients
  • Combine wet ingredients with a whisk
  • Pour wet ingredients into dry ingredients.
  • Mix well with a spatula
  • Preheat Airfryer 160°C
  • Bake at 160°C for 20 minutes.

MUFFIN BERI CAMPURAN
(12 muffins)

1 cawan beri campuran (segar/ beku)

Ramuan basah:
1 biji telur
1 cawan yoghurt (perisa asli)
1/3 cawan minyak sayuran
1 sudu teh esen vanila

Ramuan Kering:
2 cawan tepung naik sendiri (self-rising flour)
1/3 cawan gula
1/4 sudu teh garam

Cara-cara:
  • Preheat Airfryer 160°C
  • Bakar 160°C selamat 20 minit.
First time using yoghurt in my baking. :)

Mix the wet ingredients well with a whisk.

Mix the berries gently into the dry ingredients. If you are using frozen berries, DO NOT thaw them out. Use them frozen.

Pouring the wet into the dry

Looking yummy like ice cream!

I use an ice cream scoop to portion out the batter.

The batter for this recipe does not rise too much. So, I filled it almost to the top of the Ikea Sockerkaka Silicone Baking Moulds.

Bake at 160°C for 20 minutes

The muffin looks prettier if there are some fruit pieces incompletely submerged in the batter. Perhaps, I could add some berries to the top of the batter before baking in the future.

Yummy, moist and bread-like texture of the muffin

AIR-FRYER: KEROPOK LEKOR

How to fry Keropok Lekor using an Air Fryer: 1) Brush some oil evenly onto the keropok. You can use any cooking oil. I use coconut cooking oil. You can do without the oil, but your keropok will turn out a bit dry and dull-looking. If you apply some oil, it will help seal in the moisture and gives that "deep-fry" appearance to the keropok.  2) Air-fry at 180 deg C for 10 mins, check if cooked and increase the cooking time as needed. 3) Enjoy! Tambah masa memasak jika perlu. 3) Jom makan!

This is my second attempt to do this viral spicy aromatic rice. My rice turned out to be too wet in my first try. Thanks to the recipe from my friend, Intan Suraya, I finally got it right!
