I have two bags of frozen berries which were given to me by my sister during the start of MCO. They have been sitting in the freezer for more than four months now. Today, I decided to bake some muffins with them.
MIXED BERRIES MUFFINS
(12 muffins)
Ingredients:
1 cup of frozen/ fresh berries
Wet Ingredients:
1 eggs
1 cup yoghurt (plain)
1/3 cup vegetable oil
1 teaspoon vanilla essence
Dry Ingredients:
2 cups self-rising flour
1/3 cup sugar
1/4 teaspoon Salt
Method:
- Mix the berries gently with the dry ingredients
- Combine wet ingredients with a whisk
- Pour wet ingredients into dry ingredients.
- Mix well with a spatula
- Preheat Airfryer 160°C
- Bake at 160°C for 20 minutes.
MUFFIN BERI CAMPURAN
(12 muffins)
1 cawan beri campuran (segar/ beku)
Ramuan basah:
1 biji telur
1 cawan yoghurt (perisa asli)
1/3 cawan minyak sayuran
1 sudu teh esen vanila
Ramuan Kering:
2 cawan tepung naik sendiri (self-rising flour)
1/3 cawan gula
1/4 sudu teh garam
Cara-cara:
- Campurkan beri ke dalam ramuan kering dengan perlahan-lahan.
- Adukkan ramuan basah menggunakan whisk sehingga sebati
- Tuangkan ramuan basah ke dalam ramuan kering.
- Sebatikan adunan menggunakan spatula
- Preheat Airfryer 160°C
- Bakar 160°C selamat 20 minit.

I use an ice cream scoop to portion out the batter. |
The batter for this recipe does not rise too much. So, I filled it almost to the top of the Ikea Sockerkaka Silicone Baking Moulds. |
Bake at 160°C for 20 minutes |
The muffin looks prettier if there are some fruit pieces incompletely submerged in the batter. Perhaps, I could add some berries to the top of the batter before baking in the future. |
