REVIEW: MYGROSER READY-TO-COOK MEAL KIT - TOM YUM SOUP

It was a lazy Sunday afternoon. I want something delicious for lunch but easy to cook. The solution came in the form of MyGroser ready-to-cook meal kit for 2 pax. All ingredients with recipe are provided except the sugar. All I need to do is to take them out of the pack and start cooking! No chopping is required. Everything is done under 30 minutes.

Ingredients:

  • 2 – 3 cups water (1/2 of a sauce pan)
  • 10 medium sized prawns (can substitute Chicken)
  • 2 Tomatoes sliced
  • ¼ Cup Lime Juice
  • 6 Red Thai chilies
  • 100 grams Oyster Mushrooms sliced
  • 2 stalks Lemongrass sliced thinly
  • 8 Kaffir lime leaves
  • 1 inch Galangal root sliced
  • 4-5 Tbsp Fish sauce
  • 1 Tsp Sugar (not provided)

Instructions:

  1. Place the water in a saucepan and bring to boil
  2. Then add in the lemongrass , kaffir lime leaves and galangal
  3. Let boil for 2 minutes then add in the chilies, tomatoes and mushrooms.
  4. Then add in the prawns.
  5. Season with fish sauce and add in sugar.
  6. Turn off the heat and add in the lime juice.
  7. Serve hot with rice

The cooking method is quite straight forward. What you will get is an all-natural Tom Yum Soup without any additional premix paste or flavour-enhancers. Everything is pre-portioned ad pre-cut, so there will be no wastage.

The taste? Very good! Spicy, sour and delightful.

How to make the soup even better!

Here's a tip I learned from a Thai chef from YouTube. To enhance the flavour of the tom yum, remove the prawn heads and saute them in the pot until for a couple of minutes until you can smell the delicious BBQ prawn smell. Then, add water and allow the prawn heads to simmer for a few minutes. Fish out the prawn heads and add the other ingredients as per the cooking instruction.

AIR-FRYER: KEROPOK LEKOR

How to fry Keropok Lekor using an Air Fryer: 1) Brush some oil evenly onto the keropok. You can use any cooking oil. I use coconut cooking oil. You can do without the oil, but your keropok will turn out a bit dry and dull-looking. If you apply some oil, it will help seal in the moisture and gives that "deep-fry" appearance to the keropok.  2) Air-fry at 180 deg C for 10 mins, check if cooked and increase the cooking time as needed. 3) Enjoy! Tambah masa memasak jika perlu. 3) Jom makan!
