It was a lazy Sunday afternoon. I want something delicious for lunch but easy to cook. The solution came in the form of MyGroser ready-to-cook meal kit for 2 pax. All ingredients with recipe are provided except the sugar. All I need to do is to take them out of the pack and start cooking! No chopping is required. Everything is done under 30 minutes.
Ingredients:
- 2 – 3 cups water (1/2 of a sauce pan)
- 10 medium sized prawns (can substitute Chicken)
- 2 Tomatoes sliced
- ¼ Cup Lime Juice
- 6 Red Thai chilies
- 100 grams Oyster Mushrooms sliced
- 2 stalks Lemongrass sliced thinly
- 8 Kaffir lime leaves
- 1 inch Galangal root sliced
- 4-5 Tbsp Fish sauce
- 1 Tsp Sugar (not provided)
Instructions:
- Place the water in a saucepan and bring to boil
- Then add in the lemongrass , kaffir lime leaves and galangal
- Let boil for 2 minutes then add in the chilies, tomatoes and mushrooms.
- Then add in the prawns.
- Season with fish sauce and add in sugar.
- Turn off the heat and add in the lime juice.
- Serve hot with rice
The cooking method is quite straight forward. What you will get is an all-natural Tom Yum Soup without any additional premix paste or flavour-enhancers. Everything is pre-portioned ad pre-cut, so there will be no wastage.
The taste? Very good! Spicy, sour and delightful.
How to make the soup even better!
Here's a tip I learned from a Thai chef from YouTube. To enhance the flavour of the tom yum, remove the prawn heads and saute them in the pot until for a couple of minutes until you can smell the delicious BBQ prawn smell. Then, add water and allow the prawn heads to simmer for a few minutes. Fish out the prawn heads and add the other ingredients as per the cooking instruction.
