AIR-FRYER: KUIH KERIA KELEDEK UNGU


My sister sent me some purple sweet potatoes the other day and I decided to make some kuih keria. After googling, I found a recipe from an FB Air-Fryer Recipes Group. 

I had modified it slightly - instead of air-frying the sweet potatoes, I boiled them in a pot. I also brushed some oil onto the uncooked keria first before loading them into the air-fryer. This step is essential in my opinion to prevent the hardening of crust. A group member left a comment that her kuih keria had turned out very hard despite following the recipe. I also reduce the time of cooking from 20 minutes to 14 minutes (7 mins on each side). Thank God, everything turned out OK.

p/s. I  took the liberty to omit the call for a tablespoon of tapioca flour in the original recipe since I don't have it at home and I don't think it is necessary since both tapioca and sweet potato are from the same family.

Here's my modified recipe.

Kuih Keria

Ingredients (~15 pieces)
500g sweet potatoes
1 1/4 cup flour
1 teasoon of salt 
1 tablespoon of margarine/ butter

Sugar Glaze:
1 cup fine sugar
1/2 cup water

Method:
1. Boil peeled sweet potatoes in water until it is soft. Mash it up with some salt and margarine.
2. Add flour bit by bit until it bacomes a dough.
3. Shape the dough into rings.
4. Pre-heat AF at 160°C for 3 mins. 
5. Brush some oil onto the uncooked rings and air-fry for 7 min, flip dan continue for another 7 min. 
5. Mix sugar and water in a pan (on a stove) until it thickens. Coat the kuih keria with sugar. Remove from the pan and allow them to cool on a plate.
6. Enjoy! 


Kuih Keria

Bahan-bahan (~15 biji)
500g ubi keledek
1 1/4 cwn tepung gandum
1 sdk garam
1 sdb majerin/ mentega

Salutan gula:
1 cawan gula halus
1/2 cawan air

Cara Penyediaan:
1. Rebus keledek yang telah dibuang kulit di dalam air sehingga empuk. Lenyekkan dan campurkan garam dan majerin.
2. Tambah tepung gandum & tepung ubi sedikit demi sedikit dan gaul sehingga menjadi doh.
3. Bentukkan doh seperti gelang.
4. Pre-heat AF pada 160°C untuk 3min. 
5. Sapukan sediit minyak di atas doh keria dan bakar selama 7 min, terbalikan & bakar 7 min lagi. 
5. Masak gula & air di dalam kuali (di atas dapur) sehingga pekat dan salutkan kuih keria dengan larutan gula. Keluarkan dan biarkan sejuk di atas pinggan.
6. Jom makan!

AIR-FRYER: KEROPOK LEKOR

How to fry Keropok Lekor using an Air Fryer: 1) Brush some oil evenly onto the keropok. You can use any cooking oil. I use coconut cooking oil. You can do without the oil, but your keropok will turn out a bit dry and dull-looking. If you apply some oil, it will help seal in the moisture and gives that "deep-fry" appearance to the keropok.  2) Air-fry at 180 deg C for 10 mins, check if cooked and increase the cooking time as needed. 3) Enjoy! Cara memasak Keropok Lekor dengan Air-Fryer 1) Sapukan sedikit minyak masak pada permukaan keropok lekor. Saya menggunakan minyak kelapa. Sebenarnya, kamu juga boleh memasak keropok lekor ini tanpa minyak tetapi hasilnya keropok akan menjadi lebih kering dan kelihatan kurang menarik. Lapisan minyak akan menjadikan keropok lebih lembut dan kelihatan seperti digoreng.  2) Setting: Air-fry pada 180 darjah C selama 10 minit. Tengok sama ada keropok dah masak. Tambah masa memasak jika perlu. 3) Jom makan!  

NASI KARI KAMBING TIN ADABI (CANNED MUTTON CURRY RICE)

This is my second attempt to do this viral spicy aromatic rice. My rice turned out to be too wet in my first try. Thanks to the recipe from my friend, Intan Suraya, I finally got it right!
