AIRFRYER: EGG TOFU MUFFIN CUPS

I got this idea to make these muffin cups from an original recipe of Japanese Tofu Omelette shared in the Masak-masak with Philips Airfryer FB Group. Some who had tried the original recipe said they found the egg was not evenly cooked.

So, I said to myself, why not try them in the smaller individual size muffin cups? Furthermore, I managed to buy the IKEA Sockerkaka Cupcake Silicone Moulds just this morning. It was sold out before Raya.

The muffin cups turned out fantastic! I will explore by putting in different fillings next time. I think this is an awesome and healthier egg dish for breakfast, say versus the oil-fried egg.

Here's my recipe:

AIRFRYER: EGG TOFU MUFFIN CUPS
(4 muffin cups)

Ingredients:
2 Eggs
Half a tube of Japanese Egg Tofu
Onion (diced)
Spring Onion (chopped)
Red chilli (sliced)
Seasonings – Fish sauce and pepper powder
Few drops of oil (Use sesame oil for aroma)

Method:
  • Beat egg with added fish sauce and pepper powder
  • Coat the inner of each muffin mould with one or two drops of oil
  • Put a slice of egg tofu (about 1 cm thick) into each muffin cup
  • Pour in the egg into the muffin cups
  • Top with onion, spring onion and red chilli.
  • Airfry 180°C for 10 minutes

AIRFRYER: MUFFIN TAUHU TELUR
(Untuk 4 cawan)

Ramuan:
2 biji Telur
Setengah tiub Tauhu Telur Jepun
Bawang Besar (dipotong dadu)
Daun Bawang (dipotong halus)
Cili merah (dihiris)
Perisa – Sos Ikan & Serbuk Lada Sulah
Beberapa titik minyak (Gunakan minyak bijan untuk aroma)

Cara-cara:
  • Airfry 180°C selama 10 minit

One slice of egg tofu in each muffin cup

Topped with onion, spring onion and red chilli

Ready to be air fried!

Checking the egg at 5 min. Looking good!

Ding! They are DONE!

The egg tofu muffin will shrink a little after cooling, making it easier to remove from the silicone mould.

Out of the silicone mould, into the serving plate.

Here's a cross-section of what's inside.

Mmmm....Delicious!

If you don’t have some muffin moulds, you can also use a baking pan/ dish. I used the IKEA 365+ 400ml Glass Food Container which is oven friendly. Everything is the same, except increase the airfrying time to about 15 mins to ensure the egg is cooked properly.

Happy Cooking! Selamat mencuba!

Put as many slices of egg tofu in the baking dish

Pour in the eggs and topped with onion, spring onion and red chilli.

Airfry 180°C for 15 minutes. The cooking time may vary. So, adjust it accordingly.

Ding! It is DONE!

Be careful. It is hot!

Egg Tofu Omelette

Out from the baking dish, into the serving plate. You can serve it in the baking dish if you wish. I find that it is easier to cut if I take it out.

Yummy!

Warm, soft and savoury!

A delicious dish done in less than 30 minutes without much effort!

AIR-FRYER: KEROPOK LEKOR

How to fry Keropok Lekor using an Air Fryer: 1) Brush some oil evenly onto the keropok. You can use any cooking oil. I use coconut cooking oil. You can do without the oil, but your keropok will turn out a bit dry and dull-looking. If you apply some oil, it will help seal in the moisture and gives that "deep-fry" appearance to the keropok.  2) Air-fry at 180 deg C for 10 mins, check if cooked and increase the cooking time as needed. 3) Enjoy! Tambah masa memasak jika perlu. 3) Jom makan!
