AIRFRYER: BANANA MUFFINS

I always love banana muffins. It is soft, fluffy and flavoursome! This is my first attempt to make banana muffins. I found a recipe on YouTube that is relatively simple - just mix everything in the order and the batter is ready in minutes. So here it goes....

The ingredients required to make banana muffins.

BANANA MUFFIN:

Ingredients:
3 Bananas (~400g) (Mashed)
1 egg
55g Butter (Melted)
200g Sugar*
190g Flour (Sieved)
4 g (1 teaspoon) Baking Powder
2g (1/2 teaspoon) Salt

Method:
Mix the above ingredients into a batter (in the above order).
Preheat Airfryer 180°C
Bake at 180°C for 15 minutes.

MUFFIN PISANG

Ramuan:
3 biji pisang (~400g) (Dilenyek)
1 biji Telur
55g Mentega (Cairkan)
200g Gula*
190g Tepung Gandum (Diayak)
4 g (1 sudu teh) Baking Powder
2g (1/2 sude teh) Garam

Cara-cara:
Campurkan ramuan mengikut urutan di atas sehingga sebati.
Pra-panaskan Airfryer 180°C
Bakar pada suhu 180°C untuk 15 minit.

Mash the banana into a paste. Tip: To make it easier to mash the banana, cook it a few minutes in the microwave at med-high. I also melt the butter at the same time in a ramekin.

Mix butter and egg into the banana paste. Followed by sugar, flour and baking powder.

Mix everything well using a spatula/ wooden spoon.

Put the batter into the cupcake moulds. I am using Sockerkaka baking cups by IKEA.  Top it up with a thinly sliced banana in each cup.

Preheat Airfryer at 180°C for 5 mins. Bake at 180°C for 15 minutes.

Halfway mark...The muffins have risen quite nicely.

Ding! The banana muffins are DONE!

Brown and yummy!

Allow the muffins to cool before de-moulding

Ready to eat!

Yum! Fluffy banana muffins! Just the way I like it!

Overall, I'm quite satisfied with the recipe even though the muffins turned out to be on the *sweet side. I think I have to half the amount of sugar to 100g or so because the pisang berangan itself is already sweet. I will definitely bake these banana muffins again!

AIR-FRYER: KEROPOK LEKOR

How to fry Keropok Lekor using an Air Fryer: 1) Brush some oil evenly onto the keropok. You can use any cooking oil. I use coconut cooking oil. You can do without the oil, but your keropok will turn out a bit dry and dull-looking. If you apply some oil, it will help seal in the moisture and gives that "deep-fry" appearance to the keropok.  2) Air-fry at 180 deg C for 10 mins, check if cooked and increase the cooking time as needed. 3) Enjoy! Tambah masa memasak jika perlu. 3) Jom makan!
