AIRFRYER: CARROT MUFFINS



Carrot muffins are essentially carrot cake in a cup! After a successful batch of banana muffins, I decided to try my hands on baking these beta carotene-rich muffins...

They are quite easy to make. You don't even need any special tools. Just a whisk and a spatula.

The ingredients are relatively easy to get and cheap too! 

CARROT MUFFINS:
(12 muffins)

Ingredients:
3 carrots (grated)
1 Granny Smith apple (grated)

Wet Ingredients:
2 eggs
1/2 cup vegetable oil
1/2 teaspoon vanilla essence

Dry Ingredients:
1/2 cup sugar
1 1/3 cup flour (sieved)
1/2 teaspoon baking Soda
1 teaspoon baking Powder
1/4 teaspoon Salt
1 teaspoon cinnamon powder

Optional
Raisins/ Nuts

Method:
  • Combine wet ingredients with a whisk
  • Pour wet ingredients into dry ingredients.
  • Mix well with a spatula
  • Add in the carrot and apple. Mix well.
  • Preheat Airfryer 160°C
  • Bake at 160°C for 15-20 minutes.

MUFFIN LOBAK MERAH
(12 muffins)

Ramuan:
3 batang lobak merah (disagat)
1 biji epal hijau (disagat)

Ramuan Basah:
2 biji telur
1/2 cawan minyak masak
1/2 sude teh esen vanila

Ramuan Kering:
1/2 cawan gula kastor
1 1/3 cawan tepung gandum (diayak)
1/2 sudu teh baking soda
1 sudu teh baking powder
1/4 teaspoon garam halus
1 sudu teh serbuk kayu manis

Tambah mengikut selera
Kismis/ Kacang

Cara-cara:
  • Pukul telur bersama minyak dan esen vanila sehingga sebati
  • Campurkan ramuan basah dengan ramuan yang kering
  • Sebatikan campuran dengan spatula
  • Masukkan lobak merah dan epal. Gaul sehingga sebati.
  • Preheat Airfryer 160°C
  • Bakar pada suhu 160°C selama 15-20 minit.

Prepare wet ingredients and dry ingredients in two separate mixing bowls.

Mix the wet and dry ingredients until they are combined, but do not over mix it, or else you will end up with a tough muffin.

This is how your final batter should look like.

I use an ice cream scoop to portion the muffins.

The recipe is just nice for 12 muffins. I use Ikea Sockerkaka silicone baking cups.

Into the airfryer! Bake at 160°C for 15-20 minutes. I have to complete baking them in three batches!

Looking good! Check for doneness by inserting a tooth-pick into a muffin. If it comes out clean, then your muffins are done! 

The secret ingredient in the recipe is the Granny Smith apple. It adds a hint of tartness to the taste.

These silicone moulds from Ikea are amazing! Easy to use. Easy to maintain. The muffins just pop out of them without much effort to dig them out.

Delicious, soft and moist carrot muffins!
