Prepare wet ingredients and dry ingredients in two separate mixing bowls. |
Mix the wet and dry ingredients until they are combined, but do not over mix it, or else you will end up with a tough muffin. |
This is how your final batter should look like. |
I use an ice cream scoop to portion the muffins. |
The recipe is just nice for 12 muffins. I use Ikea Sockerkaka silicone baking cups. |
Into the airfryer! Bake at 160°C for 15-20 minutes. I have to complete baking them in three batches! |
Looking good! Check for doneness by inserting a tooth-pick into a muffin. If it comes out clean, then your muffins are done! |
The secret ingredient in the recipe is the Granny Smith apple. It adds a hint of tartness to the taste. |
These silicone moulds from Ikea are amazing! Easy to use. Easy to maintain. The muffins just pop out of them without much effort to dig them out. |
Delicious, soft and moist carrot muffins! |
Mission carrot muffins accomplished. What type of muffins should I try next?
