HOTEL MAYA’S ABUNDANT FEAST AT THE COMFORT OF MY OWN HOME

It is official that we are not allowed to cross borders to “balik kampung” this Chinese New Year, no thanks to Covid-19. So, no reunion dinner with my parents and my sisters for me this year.

With the MCO, the celebration might be constraint to our own home, but that doesn’t mean that we cannot have a feast! Let’s celebrate the year of the OX with delightful and auspicious dishes, straight from the kitchen of the Maya Hotel Kuala Lumpur’s Japanese and Cantonese restaurant, still water restaurant.

For Chinese New Year, the experienced chefs at still waters have whipped up some fantastic set menus to whet your appetite this Lunar New Year! You can choose from a variety of set menus starting from RM338 to RM388 for a 6-course set for 5 persons and RM1,088 to RM1,688 for a 9-course set for 10 persons.

Thanks to the generous people at Hotel Maya, I have the opportunity to sample some of the dishes featured in the wonderful set menus. Let's have a look.

Must try - Japanese Style Yee Sang. Loaded with salmon sashimi, jelly fish, Japanese crab stick, seaweed, tako, Japanese fish cake, tabiko, salmon fish roe, lettuce, lollo bionda, julienne cucumber & radish, takuan, pickled onion, sesame seeds, roasted peanut, pok choi with Japanese homemade plum sauce. Toss it higher for better luck!

Fresh, very pretty - absolutely IG friendly and bursting with oriental flavours. Check out the salmon sashimi "flower", topped with delicious salmon roe! This scores a perfect 10!

Steamed Cod Fish in Superior Soy Sauce - Truly enjoyed the simple, fresh, delectable sweetness from the fish. Can't have enough of this!

Golden Spring Chicken with Vegetable Salad and homemade Hoisin Sauce - tender, savoury and well-marinated. Goes very well with the umami-packed hoisin sauce.

Wok Fried Red & White Rice with prawn and squid - An absolute winner. Not oily and not salty at all. Fragrant and delicious. Still tasted good even though I ate the leftover the next day.

Steamed Coconut Milk Nian Gao - Not the usual golden sticky rice cake. Soft, chewy and covered with freshly grated coconut! More healthy compared to its fried version!

A wonderful feast from still waters, Maya Hotel, Kuala Lumpur.

For those who prefer to mix and match, the a la carte menu also includes a variety of soups, meat, seafood, and vegetable dishes, as well as desserts. The chef’s specials include Braised whole Abalone (18-heads) with Crab Meat, dried Scallop, Sea Cucumber, Fish Lips and Enoki Mushroom topped with Tobiko (RM38), Boiled Free-Range Chicken served with Chef’s Signature Brown Sauce with Leeks, Shallots and Garlic (RM138 for whole bird), Cod Fish Steamed in Chopped Red Chilies (RM68/100g), Braised Korea dried Oysters dumpling, Sea Moss and Mushroom served with Broccoli in Superior Sauce (RM118 for a full serving), and Steamed Homemade Coconut Milk Nian Gao with fresh grated Coconut (RM22 for 5 pieces).

AIR-FRYER: KEROPOK LEKOR

How to fry Keropok Lekor using an Air Fryer: 1) Brush some oil evenly onto the keropok. You can use any cooking oil. I use coconut cooking oil. You can do without the oil, but your keropok will turn out a bit dry and dull-looking. If you apply some oil, it will help seal in the moisture and gives that "deep-fry" appearance to the keropok.  2) Air-fry at 180 deg C for 10 mins, check if cooked and increase the cooking time as needed. 3) Enjoy! Tambah masa memasak jika perlu. 3) Jom makan!
