Who doesn't love Sago Pudding with Gula Melaka? It is a classic Malaysian dessert made of sago pearls, topped with pandan-scented gula Melaka (palm sugar) syrup and rich coconut cream. It looks easy to make. Let's try it!
- 200g Sago pearls/ Sagu Halus
- 150g Gula Melaka
- 50g Rock Sugar
- 50g Instant Coconut Powder
- 1 daun pandan

So, I soaked the sago pearls in cold water for 30 mins (yes, I timed it), before cooking it according to the instructions! To my surprise, instead of getting a nice batch of cooked sago pearls, I got a watery and gooey sago porridge! What?!!! 😭
After some Googling .... I found out that you are NOT supposed to soak the sago pearls for Sago Pudding!
You should never wash sago. Sago is made of starch, so any contact with water prior to cooking will cause the sago (which are really starch powder balls) to dissolve! - The Burning Kitchen

Not to be discouraged, I tried it the second time around! This time NO SOAKING! Once the water was boiling, I put in the sago pearls and allowed them to simmer until they were translucent! They turned out beautiful!
TIPS:
1) Make you the water is boiling before putting in the sago pearls.
2) Use plenty of water to allow the sago to expand. The ratio recommended is 1:10.
3) Stirring while cooking the sago is necessary to prevent clumping and scorching at the bottom.
After the sago pearls were cooked, I strained and washed them in cold tap water before putting in my serving cups. Chilled them in the refrigerator overnight.
The preparations of the coconut milk and Gula Melaka syrup are quite straight forward. Make sure it is done over low heat and to stir constantly as they burn quite easily.

My verdict: People who buy meal kits are usually beginner cook like me. We follow the instruction to a tee. So, the instruction has to be tested, proven and clear. We are not able to spot any mistake with the instructions unlike those who are more experienced in the kitchen. The instruction for this meal kit definitely has to be revised. I learnt a valuable lesson in making the perfect Sago Pudding. No more soaking of sago pearls in the future!
