One of my favourite Malay dishes from Pasar Ramadan is Ayam Percik. But I didn't get to buy it from Pasar Ramadan last year because of MCO. This year, I am cooking my own Ayam Percik, thanks to MYGROSER's Ready-to-Cook Meal Kit. It is one of the many meal kits offered by MYGROSER, specially curated for the fasting month.
What's in the pack?
- 2 Chicken Whole Legs (Marinated)
- 1 pre-blended Ingredient A (Lemon grass and chillies)
- 1 Ayam Brand Coconut Milk 200ml
- 1 slice of Tamarind (Asam Gelugur)
COOKING INSTRUCTIONS:
- Grill the chicken or use an oven. (Set the temperature to 180°C for 30minutes).
- While waiting for the chicken to cook, start preparing the gravy.
- Cook ingredients (A) with Coconut Milk and Tamarind Slice until the gravy turns thick.
- Add some Sugar & Salt according to your personal liking.
- Once the chicken is cooked, pour out the gravy over to the chicken and it's ready to be served
I don't have a grill or an oven at home. But I do have an air-fryer which can do the job just as perfectly. I cooked the chicken twice, first fully wrapped in a sheet of aluminum foil at 180°C for 15 mins and again at the same temperature and time settings, but with the chicken exposed, by rolling back the foil.
The first round of cooking is to ensure the chicken is cooked thoroughly while maintaining the juiciness within while the second round is to achieve that "grilled" or "charred" look.
Tip: Do use an aluminum foil to wrap the chicken instead of just plopping the chicken into the wire-basket of the air-fryer. This prevents the messy clean up later. The aluminum foil also helps to retain the moisture in the chicken, preventing it from drying out and over cooking!
Don't worry if the chicken looks kinda pale after the first round of cooking. Roll back the aluminum foil to expose the chicken and air-fry it again at 180°C for another 15 mins. |
Voila! Beautifully "grilled" ayam percik. |
Brown on the outside while juicy in the inside! |
Final product! The yummy looking piece of chicken leg covered in a delicious spicy coconut gravy! This is a winner! |
The verdict: This is a winner! Easy to make and the result is as good as if not better than the ones bought from the Pasar Ramadan! Love the spicy coconut sauce with a hint of sweet sourness from the asam gelugur. If you have a small airfryer like mine, you have to cook the two chicken whole legs in two batches, one at a time because they are rather big. :)
